On Thursday, September 13, St. Croix Chocolate Company welcomes guest chef John Sugimura. Chef John is executive chef and partner at PinKU Japanese Street Food in Minneapolis and at MSP Airport. He is a second-generation, Japanese-American and professionally trained sushi chef, whose love of sushi blossomed during time spent in Kyoto, Japan. Eating John’s cuisine is like eating in his grandmother’s restaurant in the 1930s. It is the ultimate expression of flavors, colors, and cooking methods, coming together in an authentic experience that is one-of-a-kind. 

The evening’s menu is as follows:

"Otoshi" crab and fish cake poke with quick pickled cucumber ribbon and diced jalapeño, served with pizza crust crisps

“Izakaya" style seared tuna with tomato relish on on pizza crusts crisps 

Grandma's pork gyoza with baby bitter kale and garlic ginger soy pizza and green onions and purple cabbage

Signature spicy tuna on tender "Shichimi" pizza crust

Traditional Japanese breakfast pizza with cured and seared salmon, quail egg, pickles and topped with eel soy and crispy salmon skin

Dessert will be provided by SCCC, featuring chocolates created solely for this event.

We offer two seatings, one at 5:30 PM and 7:45 PM. Seating is limited to 20 diners per seating and each diner must purchase a ticket in advance. Tickets are non-refundable, but are transferable to another person for the same date. This is a FIXED menu, but with advance notice we can try to accommodate dietary requests.

Wine and beer will be available at an additional charge. Gratuity is not included in dinner price.
